Monday night light eggy treats

Monday is Joe's late night at work, which means it's mine too as we drive home together.  As we were working late I wanted something quick, light and tasty.  Little did I know that Joe had scoffed his face with biscuits and Soreen (his new most favourite thing) so wasn't even hungry!  Humph.........

I made a super light omelette with chorizo, peppers and mushrooms, whipping the egg whites until fairly stiff and mixing in the yolks with some paprika.  It makes a cross between an omelette and a souffle but was pretty tasty, even for someone who usually dislikes eggs as much as me!

Friday - another weekend already?

We've had a good, but busy week this week, so we rounded it off by an evening at home with comfort food, wine and movies. 

Since Joe is running so much at the weekends, he informed me that he needs to fill up on pasta.  I'm not usually a huge fan, but luckily back in December we were given some nice pastas by @gustoitalianouk in our hamper of goodies. 

I made a slight fusion dish of pasta with chorizo, grilled peppers, broccoli and prawns in a tomato sauce.  It was seasoned with smoked paprika and everything came together really well - livened up with a squeeze of lemon, it was light and tasty - no stodge in sight.

Wednesday Night and Last Day at Work

Phew................I can finally say it was my last day at work for the year! Get in!  Joe and I have both been working hard recently so we've taken a proper amount of time off over Christmas, and neither of us are back at work until the 3rd of January!

Joe is celebrating properly, out with work in Manchester.  He is staying over and has said he will not be drinking very much - I quite simply do not believe him and am expecting to be proved right when he crawls home off the train tomorrow!  I, on the other hand, will be feeling virtuous after my yummy bacon, chorizo and pepper salad (oh yes, bacon AND chorizo!) and stubby beer - what could be better?!

Thursday Night - Abandoned and Late!

At the grand old age of 32, Joe has started to embrace nostalgia and the past, and tomorrow is attending his school's "Old Boys' Reunion".  I am fairly convinced this is just an excuse for Joe, Frenchie Dog Eyes, Josh etc.  to drink a lot (when I say fairly convinced, I mean I know this for a fact) but fair play to them for trying to put a grown up name on it.

So this means until he rolls home on Saturday afternoon with the hangover from hell, I am Joe-less for a couple of days.  Add to this working in Manchester and I'm feeling a little out of sorts (especially since my bloody train was late! Bastard Northern Rail!)

So having returned home at ten to nine tonight, it was a quick dinner of black pudding, halloumi and grilled vegetables.  A little eclectic, and for some reason I used the world's hottest chilli (not really, I'm being pathetic today).  Anyway I was quite a pleased with it - give black pudding and halloumi a try!
