Wednesday - Riverford Halloumi with Roasted Vegetables

Since the winter has kicked in my running has gone to sh*t! Luckily I have Jo to keep me motivated, and she dragged me out for a jog tonight kicking and screaming! (well almost).....we went for a quick half an hour and it was good to get out, pleasant almost!.....I have a 10m run in the diary in December so hopefully I will be able to keep up the running so I can drag myself around before Christmas feasting kicks in.

Before we left, Jo put the vegetables in the oven and was able knock together the below with lovely halloumi and a minimum of fuss.........

Thursday and Riverford Delivery Day

So it's definitely Winter...  as I left work it chucked it down with rain and hurricane winds blew.  Rubbish!

But everything was made better when I arrived home to a Riverford organic veg box delivery.  This one was packed with my favourite things - aubergine, red cabbage, butternut squash, fresh beetroot, potatoes, carrots and salad - yum.  I wanted to make the most of the tasty veg so made roasted vegetables with pancetta and parmesan.  It took a little bit of time but the veggies were sweet, amazingly tasty and nice and warming.  Accompanied by a nice Argentinian Shiraz, happy days!

Thursday - Riverford Veg Medley with Egg and yesterday's Pesto

It's Mums birthday on Monday so it was late night shopping for me, while Jo had a few drinks on a work night out. I obviously can't say what we have got her, but she may mention it on her blog on Monday.

Also, yesterday I created my sponsorship page for my running, which will be for the Seve Ballesteros Foundation - I am aiming for a £1000 and am on zero at the moment so feel free to put your hand in your pockets for a good cause!....click here to find it.

Back to the food, Jo whipped up a Veg Medley (made from today's Riverford delivery) topped with an egg and the left-over pesto that I made yesterday.
