Wednesday Crispy Salmon

As I write this, Joe is grumbling about the blog.  Invariably we write it after meals, with food and booze squeezed inside us and sleep coming upon us.  This is not a recipe for a happy Joe!  Luckily for us though, I am a much more sunshine happy individual and will beat Joe's grumbling out of him if need be (not really, I'm too weak for violence).  Anyway, I'm not too sure what he's got to moan about - after a 10k run Joe returned home to dinner of crispy salmon on a bed of stir fried noodles and vegetables in a satay sauce WITH PRAWN CRACKERS!!  Take away shmake away....  this boy is spoiled rotten.

Sunday to Thursday - a round up of treats

Apologies for the slight sabbatical from the blog this week - we've been engaged with other things so this is a round up of Sunday to Thursday this week!  We're still trying to be relatively healthy, although I was making the most of finally being able to eat a full meal so you'll have to excuse Monday's fish and chips, but here it is...

On Sunday we had Joe's stir fried udon noodles with teriyaki salmon, and very nice it was too!  I love it when Joe cooks, and bless it seems to have fallen to him a bit more this week.

Monday was the naughty fish and chips.  Joe and I didn't really celebrate the bank holiday this year - whilst I had some work to do, Joe went home for the day to spend some time with the family.  By the time he came home the last thing we were in the mood for was cooking (how very unlike us!) so it was straight to the freezer for fish and chips.  At some point I'll cave and let him go the chippy for some real fish and chips, as the freezer version is always a bit disappointing, but that'll only be after A LOT of running and a very healthy week!

On Tuesday I was back in the kitchen, knocking up stir fried noodles with spicy black bean prawns with yellow pepper and spring onions.  It was pretty healthy and went down very well, especially with a nice glass of chenin blanc...woops.  I think the booze ban may be delayed until May after all!

On Wednesday Joe was back in the kitchen.  Bless, he had run home after a long day at work so was already pretty tired, and then received a call from me saying I was going to be working late so dinner was up to him!  He did surprise me though, making a pasta bake with broccoli and cauliflower, which was very tasty.

And finally on Thursday we headed to the Adelphi for @homage2fromage's latest cheese night - challenging cheese!  I've been telling Nick for a while that I thought they should do some really filthy cheese.  My favourite cheeses tend towards the face-melting, walking off the plate variety, which is often difficult to locate in the UK.

Well Nick and Vickie certainly came up with some pretty challenging cheeses - there were 8 to try and I liked all but 2 of them.  My least favourites were the Stinking Bishop and the Oxford Isis, which had something of an air of cabbage/fish about it...gross!  The best one by far was the Epoisses, which is washed in brandy and is banned on public transport in France for being so whiffy and the Reblechon was also very nice (I can see a trend with the French cheeses here).  There were some superb varieties on offer and it was a great evening all round.

Sunday - Half Marathon and Salmon!

Today was an early start as I was running the Liversedge Half Marathon at 11am.....it was my second half, and I was hoping to get round in sub 1hr 40mins which would have been 6 mins better than my first time out. In the end, the hills defeated me and it was a 1hr 40mins 49secs finish which was close but no cigar.....!! There is always next time!!

After an afternoon of relaxation with nibbles, a couple of drinks and the papers Jo prepared us a very pretty dinner of salmon on a bed of spinach with baked sweet potato in canjun spices - DELICIOUS!!

Monday Pan Fried Salmon

After a nice weekend with comfort food like mash and pastry, it seemed like a good idea to go for something light on Monday.  Step up pan fried salmon with chorizo, leeks, tomatoes and spinach (with chips on the side - not pictured!)  Not such a bad effort and on my way to feeling healthy again..!

Monday - Jo is back.....thank the Lord!! - Lemon Salmon with Stir Fry Vegetables

Regular readers of the blog (whoever you are!) will know that Jo left me to fend for myself for a lot of last week as she was working late......but now she is back and we are back to normal hours! Phew.....tonight Jo knocked together this lovely Lemon Salmon with Stir Fry Vegetables in under 20 minutes.

Jo also asked for me to mention that she went to Town Hall Tavern in Leeds for a quick post work drink and wanted to say that they make some very interesting scotch eggs (they were my favourite snack until pork pies came into my life) - today she had one with slow cooked pigs cheek which I will try next time I am in!

Sunday - Round 2 in the competition - salmon and chocolate pots

Last Sunday Joe laid down the gauntlet with his roast lamb so this week it was my turn to show him how Sunday dinners should be done!

My choice was baked salmon with a white wine and dill sauce, served on mash with ribbon carrots and courgettes, followed by melting chocolate pots.  It's pretty much my ideal dinner - fish followed by chocolate, and even Joe liked it!  Have put a brief recipe below for the fish (for those who have been complaining about my lack of recipes!!)

Baked Salmon with dill and ribbon veg (for two)

2 salmon fillets, skin off
half a courgette, in ribbons (use a potato peeler)
half a carrot, in ribbons (peeler again)
half a lemon
flour
butter
glass of white wine
1 tablespoon of fresh dill
cream

1. Preheat the oven to 200 degrees
2.  Put the carrot and courgette ribbons into an ovenproof dish, season, and squeeze 2/3 of the lemon over it.
3.  Place the salmon fillets on top, season lightly and squeeze the remaining third of the lemon over the top.  Put the dish in the oven (uncovered) for about 12 minutes, until cooked.  (Obvs the timing will depend on the size of the fillets and how cooked you like your salmon - trust your judgment!)
4.  Make a roux in a frying pan by melting the butter and then stirring in the flour.  Don't have the heat too high or you'll burn the butter and flour and everything will taste of burnt flour!
5.  Add the wine a slosh at a time, making sure it is fully incorporated into the flour mix before adding anymore.
6.  When the wine is incorporated, add a splash of water depending on how thick your sauce is - you want it to be double cream thickness.
7.  Bubble the sauce for a few minutes to make sure the wine is cooked off, and then add the chopped dill and stir through.  Switch the heat off, and then after about 30 seconds stir through a slug of cream.
